Freekeh originates from the Middle East and is a durum wheat grain that is harvested early while still green and soft, then dried, chopped and roasted. Because of the early harvest, the grains contain more vitamins, minerals and proteins than regular grains and quinoa. Freekeh is also high in fibre and provides a good feeling of satiety. And it tastes really good.
Preparation: Use 1 part Freekeh to 2 parts water and cook with a little salt for 45 minutes.
We import Freekeh from Taybeh Brewing Co. , which buys from a farming cooperative in the West Bank city of Jenin. They produce authentic freekeh using traditional methods. The production creates work and income for both women and men.
Taybeh is an internationally recognized company that was established in the West Bank in 1994.
The company is run by a Christian Palestinian family, and has become a symbol of cooperation, respect and peaceful coexistence between religions in a troubled region.
