Couscous, called maftoul in Palestine, is made from durum wheat that has been crushed, steamed, and shaped into small grains. It is among the healthiest grains and is of high quality. Palestinian couscous is coarser, with larger grains and more fiber, and is suitable as a healthy alternative to pasta or rice.

Preparation: Pour 1 part couscous with 1 part boiling water in a bowl, cover with a lid. Let stand for 5 minutes. Can be mixed with herbs or used in salads, for example.

We import couscous from Taybeh Brewing Co. , which buys from the Rural Women's Development Cooperative in Taybeh, which was formed in 2005. They produce couscous using traditional methods, where it is hand-rolled and sun-dried immediately after production. The production creates work for Palestinian women in the West Bank.

Taybeh is an internationally recognized company that was established in the West Bank in 1994.
The company is run by a Christian Palestinian family, and has become a symbol of cooperation, respect and peaceful coexistence between religions in a troubled region.
