A Palestinian meal

We hope you will enjoy a Palestinian meal.
Use the Palestinian couscous , called maftoul, which is much better than regular white couscous. It is more flavorful, with larger grains and more fiber.
Add freekeh to the salad. Made from the finest durum wheat grains, harvested early while still green and soft, then dried and roasted.
Enjoy a glass of Nadim Zeini Blanc , made with the local Palestinian grape Zeini. A pleasant white wine with fragrant aromas of apple and pear. Perfect for a sunny spring day.
Or perhaps a full-bodied and elegant Nadim Cabernet Sauvignon with flavors of local spices and ripe cherries.
As you enjoy your meal, think about the Palestinian farmers, women, brewers and winegrowers in the small village of Taybeh in the West Bank. They are struggling right now to make it through a conflict that they are not to blame for, but that is hitting them hard. Distances that used to take 10 minutes to travel now take 1-2 hours. They cannot get goods in, and therefore they cannot get tin cans for the olive oil we have ordered. Most importantly, they are deeply worried about their relatives, friends and compatriots. But they continue to work.
