Healthy fruit crumble with nuts and dried fruit
This crumble is both easy and nutritious - and works with many types of fruit: try blueberries and green apples, plums and peaches, strawberries and rhubarb or pears and blackberries. It's high in protein, low in added sugar and full of flavour and crunch.
Tip: If you don't have the exact nuts or dried fruits, you can easily vary - just make sure you have about 200-250 g of mixed nuts and fruit in total.

Ingredients:
Fill:

900–1350 g fresh fruit, cleaned and cut into bite-sized pieces (e.g. blueberries and apple, plum and peach, strawberries and rhubarb)

2 tablespoons lemon juice

50 g light muscovado sugar (can be omitted or reduced if the fruit is very ripe)

30 g starch (e.g. arrowroot, tapioca, potato flour)
Topping:

4-5 sun-dried figs , finely chopped
-
40 g dried white mulberries (½ cup)

65 g Shakhurbai almonds (roasted and salted) or Gurbandi almonds (raw), coarsely chopped (½ cup)

35 g apricot kernels (roasted and salted), coarsely chopped (¼ cup whole)

35 g baby pistachios (roasted and salted), coarsely chopped (¼ cup whole)

30 g oatmeal (⅓ cup)
-
3 tablespoons teff flour or other whole grain flour
-
3 tablespoons coconut oil or other solid oil
-
2 tablespoons powdered sugar
-
1 teaspoon cinnamon
-
1 teaspoon ground cardamom

½ teaspoon sea salt
Procedure

Turn on the oven to 185 °C.

Mix the filling : Place the fruit, lemon juice, sugar and starch in a bowl and mix gently to distribute evenly. Pour the mixture into a square baking dish (approx. 22x22 cm).

Make the topping : Use the same bowl and add all the topping ingredients. Stir until well mixed and the coconut oil is distributed.

Spread the topping evenly over the fruit in the pan, covering the entire surface.

Bake the crumble for 50 minutes. It should be bubbling nicely around the edges and the top should be golden. If the mulberries are getting very dark, you can turn down the heat a little for the last 10 minutes.

Cool before serving. The crumble will set as it cools.
