And the olive oil has a very special story. During the second intifada in 2002, the economic crisis in the West Bank became so severe that local families in the small Christian village of Taybeh began to pay their children's school fees in olive oil. The local priest, who was also the head of the school, didn't know what to do with all the olive oil, so he contacted the local brewery, Taybeh Brewing Company, and asked if they could help. They already had an export license, and that's how the brewery also started exporting olive oil.

Today, the economic crisis in the West Bank is again very serious, and the village and local families have been affected by a series of attacks from extreme settlers, who have also burned down some of their olive trees.
